Hey guys, could anyone point me in the best direction in terms of a blog software / cms choice based on few simple guidelines / important factors.

1) not complex options / feature set, rather one simple to use and manage for the most basic of blog types with couple of images per each blog post and few basic categories / tags to identify different content posts
2) simplest possible install with least 3rd party components required to run

Hey there
I would say Blogger or WordPress.
Easy to install fast and with the details you provided, need less than two third-party plugins to run.
WordPress only needs SEO and security plugins if you don't have the patience/knowledge to add it to the backend.
Blogger is well, easy to use, and more user-friendly.

And they are free to use, with no need for premium features with your requirements.

We are in a Wordpress forum here. That's probably why Wordpress is suggested to you most often.

There is nothing complicated about a blog. Before installing a wordpress monster :), you can look into flat file CMS and headless CMS. Maybe that's a possibility for you. Here are two examples...

Bludit - Flat File CMS
The data is stored in JSON files. It also has an API built in for your own additional content. You can use any HTML template, but you have to adapt it to Bludit.

Strapi - Headless CMS
Here you can use REST API or GraphQL. Then in your HTML template or even better Angular/React/Vue/Svelte template you just build in the queries.

I would say go for WordPress as a beginner.
