Hi. I am sorry if this is a noob question but how do I update this to the latest version? Do I just replace all files except the .env file?

You can read the instruction from developer, then upgrade in 4 step as below:

Step 1: Override folder app, database, config, platform, public/themes, public/vendor, bootstrap, vendor, composer.json, composer.lock and public/index.php from the latest version.

Step 2: Clear all caches (Admin -> Platform Administration -> Cache management).

Step 3: Deactivate all plugins then activate them all again.

Step 4: Go to Admin -> Translations -> Other translations, then click on Import group to update translations.
